About this Recipe

When I lived in Paris with my to-be wife we had a really small flat on the ground floor with a tiny patch of land and every Sunday there was a huge French market where we would buy all of our fresh food. When the weather was good we would buy fresh sardines and cook them for lunch – barbecued over a homemade metal BBQ. We always cooked sardines because the BBQ wasn’t big enough for anything else!  Great memories and hope you like my woodfired sardines recipe.

Fresh sardines Olive oil Salt and pepper Lemon juice

Recipe Instructions

Fresh sardines don’t need any fancy recipe, let their amazing flavour and texture shine. I used a cast iron panini cooker for this – wipe the panini cooker with olive oil, place your fresh sardines with salt and pepper and into your woodfired oven for 2-3 minutes. It is quick – do not overcook.
Woodfired sardines served with an extra drizzle of olive oil, salt and pepper and squeeze of lemon juice. Simply perfect.
