Cod roe always brings up memories for people – good or bad! My Dad loved it and we all had to join in – not a pleasant experience for a kid. My wife is completely the opposite – she loves it. So this smoked recipe is for her.
300g smoked cod roe
Squeeze of lemon juice
150ml olive oil
3 tbsp crème fraîche
I peeled away the skin from the roe and put 300g of roe into my food processor, added a squeeze of lemon juice and slowly started adding oil whilst blitzing. Once mixed add the creme fraiche and keep gently mixing.
What you do next is up to you..dive in with crackers or spread on toast. Your choice.
For my wife I created small mini-tasters in croustades with a slice of homemade pickle.
