Caramelising fruit is really easy, cover your fruit in brown sugar (add some whisky or cognac if you want an extra kick) and sear the outside edges directly over the heat, the sugar will caramelise very quickly and you are looking to brown all of the pineapple.

 

Add your favourite ice-cream or a dollop of mascarpone and you’ve got a delicious dessert.
